Simple Avocado Salad / Avocado Salad With Cilantro Lime Dressing

Today's recipe is simple and a healthy salad using Avocado. The avocado is an incredibly healthy food and loaded with important nutrients. It is often called “alligator pear,” which is very descriptive because it tends to be shaped like a pear and have green, bumpy skin… like an alligator. The yellow-green flesh inside the fruit is eaten, but the skin and seed are discarded. When compared to many other fruits, Avocados are high in healthy fat, fiber, anti oxidants and other nutrients and vitamins.
The regular intake of Avocado helps to lower the cholesterol and triglycerides. Also the fat in Avocados help you to absorb plant nutrients.

The avocado has become an incredibly popular food among health conscious individuals. It is often referred to as a super food/gold food. I am sharing one of the easiest and delicious salad recipe. I love avocado with lime, little salt and pepper. The tanginess from lime pairs well with the creamy avocados.

I am eagerly waiting for the Kids Winter Break that is starting from this Friday. I have scheduled each day an assignment with my kids along with their reading and kumon work. Wanted to enjoy this winter break usefully and creatively with my kids. Both my boys are also waiting for the school break, they wanna bake and cook with me. Little one has bookmarked few cookies from the Taste of Home cookies book and wanted to bake it for Christmas. Also, I bought some surprise toys (board games) and gifts for them. Hope everything will go as our plan.

Now coming to the recipe, Quinoa Black Bean Salad / Quinoa Salad. This is a salad cum meal recipe. You can have this salad alone for lunch or dinner meal, since it is loaded with beans, carrot, onions, spices, lime dressing and almonds for crunch. What else you need for a healthy, filling and delicious meal more than this. You can also make this Salad as a side along with grilled chicken breast or fish. A wholesome dish to enjoy anytime of the day. If you are a fan for Chipotle's Cilantro Lime Rice Bowl, then you will love this salad too. Here, I used Quinoa but you can use any millet, Brown Rice, Whole grain Pasta for a carb susbtitute in the salad.

At the same time I am sorry that I couldn't do a courtesy visit back to your space, hopefully by next week will do it. Thank you for your support. Today's recipe is a simple, colorful and refreshing salad with greens and a fruit combo. This is kinda summer salad with summer special fruit strawberries but here strawberries are available throughout the year so can enjoy this salad anytime.
Only thing the taste of berries may not that sweet now, so I added some brown sugar to the dressing and the best part of this salad is the dressing. Mild tangy, sweet dressing with poppy seeds
was awesome and refreshing with spinach and strawberries. First time i tried dressing with poppy seeds, instead of black one I used white poppy seeds and i loved it. Overall the salad was delicious and filling.

If you are looking for some colorful, healthy, delicious and vegan Salad for meal then this Spinach Orange Pomegranate Salad is perfect. Now-a-days i prefer only salads for lunch and fruits for dinner. This is working out for me and I am feeling fresh and healthy. Half cooked or raw salads or just mixed fruits alone makes my meal more satisfying. We love eating raw salads and i always prefer a light dressing than the creamy or yogurt based ones. I slightly modified this Salad recipe from Two Peas & their Pod. Here, I used fresh Pomegrante and orange juice for dressing. The salad turned out awesome with both sweet and tangy taste.

Salad is a simple dish that contains fresh vegetable, fruits or with cooked meat/chicken, even eggs. We love salads with fresh veggies and fruits than the meat salad.The most favorite part of any salad is its dressing or salad sauce. It may be a simple vinaigrette or creamy ranch. I mostly prefer tangy and sweet kind of salad dressing where as my kids prefer the creamy sauce dressing with ranch, honey mustard, sour cream or yogurt.
This Cherry tomato Lettuce salad is a refreshing and simple salad with basic vinaigrette dressing with honey touch. This can be either served as an appetizer salad or as a dessert salad after a meal.
I got some fresh cherry tomato from my friend Gaury's Garden. These tomatoes were literally sweet and perfect for this salad. Use cherry tomato or grape tomato or pear tomato for this salad.

Black Bean And Corn Salad


Now-a-days i am not much interested in cooking n blogging :( Dunno the reason, may be after my sickness, one after the other got infected and still My H suffering with Bronchitis. So i am not cooking much and finish my work with simple cooking or like one pot meals. But sometimes i like to click my regular cooking and used to update my archived recipes with new /step wise pictures on Spicy Treats' Facebook Page. Today's recipe also doesn't involve sauteing, this and that, simply chop and assemble. Long back, i saw this recipe on a magazine, The Natural Health Magazine under the heading, " Five foods which gives you instant energy" and i noted it on my mobile. After coming home, next day itself i tried this salad with little changes. And it tasted so delicious, refreshing n filling. Great for lunch to cut down your meal or even good for snack. Mixed Beans Mango Salad / 15 Beans Mango Salad

How can a summer special post ends without a mango recipe?! So for the final day post on the theme "Summer Salad" going to share a super delicious n nutritious salad with Mixed Beans and Mango, both raw n ripe mangoes. Long back i bookmarked this salad from Taste of Home site. The original recipe is with Black beans only but i recreated with mixed beans/15 beans combo. Usually i make Sundal and curry with the 15beans. This 15 beans pack are available at all local grocery stores. It comprises of mixed beans, peas, lentils and are as follows...black beans, red beans, Dark and Light Red kidney beans, navy beans, great northern bean,Large and,Baby lima beans,pinto beans,Green and Yellow split peas, black-eyed peas,Various forms of lentil- Red Chief, Eston, Pardina, Crimson, Cranberry beans (shell beans), chick peas, Small white bean, Pink Bean.
For today's post i actually wanted to share a fruit salad but except mangoes n apples everything was over. Then i decided to make some simple salad with mango n mixed beans which i soaked to make sundal. Leave some setting time for this salad, so that the dressing blends completely with the beans n fruits. This recipe was adapted from Taste of Home.

Carrot Salad With Orange Honey Dressing

For the Day 2 of Blogging Marathon # 17  under the theme "Summer Salads" I am going to share you another refreshing and healthy salad - Carrot Salad with Orange Honey Dressing. First time i tried this orange-honey combo for my salad as dressing and it turned out awesome. It was superb! n i have no words to explain the taste...Friends do give it a try, sure you will love it to the core, even if u don't like salad i am sure you will love to eat this healthy n colorful salad. You won't believe, my 3yr old loved this salad very much but he didn't like raw ginger pieces. Other than that he loved it :)
This recipe was slightly adapted from allrecipes.com In the original recipe they used lemon juice n sugar for dressing but i replaced lemon with Fresh Navel Orange n sugar with honey. To make it even more healthy n tasty i added a handful of cooked black eye peas, finely chopped raw mango,red onion n tomato and few ginger stripes. I also tried the same with fresh lime juice that was also so refreshing and yummy. This salad can be served along with your meal too, so that u will consume more salad n less food ! Cucumber Salad ~ Tangy N Refreshing !!

Time for Blogging Marathon # 17 with a new Format, instead of 7 days of blogging only 3 days for two/four weeks that too with posting on alternate weeks options too...Very interesting right?! To know more about the Blogging Marathon n the Rules plz hop over to Valli's Space. For this edition i picked to post for 2 alternate weeks. For this week i chosen "Summer Salads" as my theme. Me n My H love salads with or without meal n any time of the day. He doesn't like the dressing part only the tossed raw/fresh fruits/vegs but i love salads with dressing only, that too if it is sweet-sour-spicy!!
Here the past few days were too hot n reached to 75F-80F, i made lots of refreshing drinks like Orange Mocktails, Minty Blueberry Mocktails n lemonades to beat the heat. In that row, this Cucumber Salad is another refreshing n perfect summer recipe. I made a very simple, light n tangy dressing. And also added few Raw striped mango and kashmiri chilli powder to the salad along with few almonds for crunchy taste. On whole i turned out so delicious n refreshing, Do try this at home n let me know h it turned out to u. Cilantro Lime Chickpea Salad

For Day 5 of BM#16, I am going to share a simple and very refreshing Salad with my star ingredient, Chickpeas/Channa/Garbanzo Beans. Usually i make Sundals for my evening snack and sometimes will skip cooking n simply toss the legumes/dals with lime n carrots or even sometimes with yogurt. Salads which doesn't require cooking/half cooking process impress me a lot. One such recipe was this Cilantro Lime Chickpea Salad which i bookmarked @ Heather's Dish. In the original recipe, she added pulsed baby spinach but i skipped it becoz i don't have it in hand and also I Indianised it with the addition of kashmiri chilli,chaat masala n cumin powder. I loved eating this salad a lot than the chickpeas Sundal. This is very refreshing, tangy n lil spicy. Perfect for both Sunny n Rainy  days. Friends do give it a try, its very simple n i am sure you will love it to the core. Now to the recipe...

Herb salad - For Gourmet Seven

 Happy Women's Day Friends. I always feel proud to be a Woman but there are some situation which makes to feel bad for the same. H about you gals?!!!!
         Now coming to the recipes, For this month's The Gourmet Seven we decided to prepare some exotic Salads and landed on 101cookbooks. Salads are not new to me weekly three times i make Sundal or simply boil any legume/lentils , mix with onion tomatoes, then stir in lemon honey dressing. This is routine at my home and my H love Salads. When i went to India, he managed his days with only salads n fruits. He love to eat raw vegs/legumes/fruits as such without tossed in dressing. He badly hates the dressing part, Dunno the reason but me straight opposite to him :) love salads mainly for its dressing part n not interested to eat them raw. My kids also like me they too love the dressing part, mainly the simple Mayo dressing.
        As i love the dressing part more, i chosen this Herb Salad. Yes, this salad include simple ingredients with Avocado dressing...Mmmmm...Yummy !! We even enjoyed the left over dressing as a Topping (mixed with some finely chopped cucmber,onion,tomato,cilantro)to go with Multi-grain Toppers. You can even enjoy this Avocado dressing as a sandwich spread. And the other main part of the recipe, "Herbs" - Cilantro,Basil & Chives. Cilantro is not a new one we daily use in our day-to-day's cooking, Basil i have used once or twice in cooking but Chives i tried for the first time. I added only 2 chopped basil leaves n few chopped chives, as my H doesn't like its strong flavor. The herbs doesn't smell anything until i tossed it with the salad ingredients, so adjust to your taste. And for the crunchy part i used Peanuts n Pecans instead Pepitas. Peanuts tasted so good with the corn n beans. Try this salad with rich avocado dressing, sure u will love it. Now to the recipe...

Fruit Salad With Ginger Honey Dressing ~ Winter Special

          Today's recipe is healthy fruit salad with home made ginger honey dressing. Winter is the season where we and the kids are more prone to Cold and Flu. Because of recurring infection our body loses its natural immune power. So its very important to keep our self Fit and Active. Generally i have the habit of taking one apple or at least half apple n one banana in regular basis without fail. But sometimes due to sever cold or sore throat i hate or i wont eat fruits. Fruits are most essential part of our daily diet which supplies all necessary vitamins, minerals, calcium etc. So its very important to take at least an apple n a banana daily. Its very compulsory for my kids and i gave them daily without fail.
