Mango Popsicle Recipe
Today I am here with an another easy, yummy kids friendly summer treat recipe, Mango Popsicle. I love mangoes in any form and if it is a chilled treat like Mango Milkshake, Mango Lassi, Mango Kulfi or Mango popsicle is my most favorite of all. I have already shared the Mango Kulfi/Mango creamsicle recipe and this time tried simple fruit popsicle with mango puree. This popsicle also doesn't require more ingredients just 2 or 3 ingredients is needed to make Mango Popsicle. Nothing can beat the homemade fresh fruit popsicle.
 Recipe is simple to make but I find it hard to take pictures of this Mango popsicle. It started melting soon, no matter temperature is hot or cold. I have seen many popsicle pictures showing nice and smooth texture of popsicle but I couldn't able to click one like that. May be next time will try to present fruit pop with neat pictures. Mango Lemonade / Mango Lemonade With Simple Syrup - Easy Mango Summer Recipe!

Summer at its full swing here, the past week was sunny, hot and humid days. Though it rained heavily during night time with strong T-storms we couldn't feel the chill breeze. Dunno how we going to manage another 2 months, we need to be hydrated and stay cool by having more water, fresh juices, cool drinks and summer fruits. My kids love mock tail or aerated kind of drinks rather than the milkshake or milk based drinks. So for them i make Lemonade, Orange Mocktail, Mango Mint Sparkler, Watermelon Lemonade and this time Mango Lemonade with Simple Syrup. This Mango Lemonade is a very delicious and refreshing thirst quencher and a must try Summer Drink. I used simple syrup for this Mango lemonade, simple syrup is nothing but a sugar syrup with one part of sugar and one part of water boiled until sugar dissolves. You can use this simple syrup to make any juices and it can be refrigerated up to 2 months or more.

Mango Lassi / Mango Lassi(With Cardamom) / Mango Yogurt Drink !

Today's Recipe is another easy and delicious drink made using yogurt and ripe Mangoes, Mango Lassi. Lassi is a simple yogurt based drink and it can be made both savory and sweet drink. Sweet Lassi can be made with fruits also and here i have used fresh Ripe Mangoes and flavored with cardamom. Of all the fruit-yogurt based drink, this Mango Lassi is one of my most favorite drink. I love cardamom to my lassi but it is purely optional.You can even top it with some chopped pistachios also. There are lots of recipes for Lassi, some uses more yogurt and less milk, few even add some cream for rich and creamy taste but i like to add equal amount for fresh Yogurt and milk. Hi, Friends & Readers, Hope you are doing great and everything is fine from my end too. Because of our shifting and other things i took a break and Finally we shifted and settled in Aurora. Though it;s a Interstate move, one or the other things kept me busy. I really missed by little space and my dear blogger friends a lot. And, now I am happy and excited to be back. Instant Mango Pickle / Quick Mango Pickle / Raw Mango Pickle

After a long time I am so happy to find some Raw Mangoes Here in Indian Store. The raw mangoes which we get here in local grocery stores will not be firm, tangy n doesn't taste great. But a month back during my visit to Patel Brothers(Indian Grocery store) saw this green Raw mangoes. Mangoes were sturdy so tangy n tasted so good like the one we get in India. I was so happy to see and bought few mangoes. we ate all the mangoes as such with salt n chilli powder, me n H love it that way more. As we get it after a long time we could not control our self n had it as salad n snack :) Then i wanted to make few mango recipes for blog and bought 2-3 lbs and tried few recipes to share here in my space.
Here comes the first recipe, Instant Mango Pickle. This pickle is one of the easy pickle that u can make it in a jiffy. This pickle is common in all special functions like Wedding, Baby Shower/Valaikkappu since its easy and quick people mostly prefer this pickle to serve for any feast. This pickle goes well with Curd Rice, Sambar sadham, Lemon Rice, Rasam & rice or you can enjoy this as such like a salad. This is so simple to make, just chop and do tempering that's it...Tangy & Tasty Mango Pickle ready. 


Ingredients
  1. Raw Mango    1 no. or 1 and 1/2 cup (chopped pieces)
  2. Turmeric Powder    a small pinch
  3. Salt     1/2 tsp or to taste
  4. Chilli Powder     1/2 tsp or to taste
  5. Hing     a small pinch
To Temper
  1. Oil      2-3 tsp
  2. Mustard seeds    1/2 tsp
  3. Urad dal    1/4 tsp
  4. Curry leaves    few (optional)


Method
  • Wash Mango thoroughly and wipe with a paper towel, then chop in to fine pieces or to your desired shape n size and keep ready.
  • Heat oil in a pan, when its get heated add mustard seeds and allow to splutter then add urad dal and fry till golden brown and add curry leaves n hing.
  • After that add chopped mango pieces, turmeric powder, chilli powder, enough salt and stir everything well.
  • Keep stirring in medium heat for a minute. I like my mango pieces to be bit crunchy so i saute for a minute then removed the pan from heat.
  • If u want it to be soft then stir fry for one more minute and turn off the stove.
  • That's it..Quick Mango Pickle Ready. 

Notes:
This pickle should be consumed within a day. 
I do not add roasted fenugreek powder/Methi seeds powder but if u want u can add a generous pinch of it.
Do not saute the mango for long time, just 1 or 2 minutes is enough.

Mango Chocolate Marble Cake / Mango Marble Loaf Cake ~ Home Baker's Challenge # 2

After completing after our first Challenge Pizza, a savory bake this time i chosen Mango Chocolate Marble Cake for the second month challenge. Thanks Home Bakers Challenge group members for giving me this wonderful opportunity to Host and give the baking challenge with my desired recipe. Its my long time wish to try this Mango & Chocolate combo, have seen many no bake cakes with this combo but not much the baked version. And more over its summer and Mango, king of fruit is easily available. So i decided to bake this mango-choco combo with you all and i have picked two different recipes, one with Egg & butter and the second one is Eggless & Butterless recipe. I tried the eggless & butter less version and it came out so good, very moist, soft & delicious cake. Actually i picked two recipes with Banana & chocolate combo and experimented with Mango Pulp instead of banana puree. To my surprise the combo turned out perfectly, Mango & chocolate paired well.

Mighty Mango / Mixed Fruits Mango Juice

Its time for Vegan Thursday, a small group created by Priya in which the members of this group share Vegan recipes monthly twice on Thursdays. There's no special themes, rules for this group and is mainly to share vegan recipes. For this Thursday am happy to share a Healthy & delicious Vegan Drink - Mighty Mango with the King Fruit Mango & mixed fruits(apple,orange,banana with a hint of lemon) combo. So healthy, tasty and loaded with all necessary nutrition. Sometime back my H bought an organic drink named, Mighty Mango. The colour of the drink attracted my kids and they wanted to get it for them or else we won't buy any bottled drinks for kids. That store bought Mighty Mango was a combo for mixed fruit juice with mango flavor dominating and thus it named as "Mighty Mango" (i think so). We loved the drink and as its organic without preservatives we used to buy once in a while n enjoy.
As now its a Mango season i wanted to try it at home, so with the help of the fruit proportions given in the bottle i tried it and the juice came out so good. The colour of the juice was so refreshing and taste also so so good than the store bought ones. This juice stays good in the refrigerator for 2 days, only thing because of apples and banana the colour of the juice turned little dark on the second day. Otherwise it was so delicious, filling and more healthy to give ur kids & a perfect drink for anyone who love fruits. Now off to the recipe...

Mango Banana Strawberry Smoothie / Breakfast Smoothie

Today's recipe is also a summer special drink with the season's fruit Mango. To make this even more nutritious and delicious i tried adding banana and strawberry. The combo turned out really good and we loved this yummy smoothie. This is very filling and perfect for breakfast n good thirst quencher too. As its contain banana and mangoes this is not a low calorie drink but loaded with vitamins & minerals. I usually do not add sugar/honey to my drinks and this smoothie also doesnt require any artifical sweetner, sweet from the fresh fruits itself enough but if u wish/want u can add it very well. Mango Kulfi / Easy Kulfi Recipe - Summer Special!!!

Summer at its peak in India and few other conutires but here in WI its still little chill, windy and only from this week weather is getting warm and bright. After spending 6-7 months in minus degrees we feel that 70 or 75F itself too hot, sweat n thirsty. Dunno h we managed in India but now we cant bare the heat n we look for chill air n cooling alternatives like food n drink which makes our body cool n
refreshing.
We keep ourselves cool n energetic by taking fresh fruits n its juices, lemonade, mocktails, ice creams in hot sunny days. Here we get all kinds of fruits round the year except the price varies but in India summer is very very special & colorful. We get the season's fruit - mango, watermelon, jack fruit, nungu(palm fruit) and everywhere u can find roadside shops/small stalls selling these fresh fruits, sherbath, lemonade, fresh fruit juices, khulfi, ice creams, badam kheer, tender coconuts, kambu koozhl, neer more n many more. Really missing all!!!

Cranberry Mango Thokku Pickle / Cranberry Pickle - Indian Way!!


Hope u all had a wonderful celebration and enjoyed the festival with your family & friends. Mine went as usual a weekday :) All sweets and savories made for Diwali had over and
today H asking me what's next in ur blog, Thanks Giving / Christmas special recipes?!
I replied, dunno am damn tired and i don't want to strain more for some days,
But he insisted me to do something so that they can enjoy for another 2-3 weeks,
After hearing such things from Him i am bit motivated, so will try something :)
Now Coming to today's recipe, Cranberry Mango Thokku Pickle, last week i made this tangy and spicy pickle, quick version and the combo, cranberry-mango worked out well. Pickle turned so good and i loved it with everything, rice,roti,stuffed paratha,idly,dosa etc. I had already shared an Instant Cranberry Pickle, this time tried along with Mango, in thokku style pickle. Eggless Mango Mug Cake


Today's recipe is very quick and delicious Mango cake in less than 2 minutes. Yup, you can enjoy this super soft n yummy cake instantly with very less and basic ingredients along with some Mango pulp. Long back i bookmarked Eggless Mango Cake recipe in my dear friend Sobha's space. There are so many favorite recipes in Sobha's Good Food. And i am yet to try those delicacies. In that do list, i am so happy that i tried this Eggless Mango cake, but i converted it to a Mug Cake and also added few chocolate chips :) The result was awesome, but i tried 3 mugs to get the perfect recipe. First time, i felt that sugar was too less and next time i tried adding little more sugar n also added Vanilla Extract for flavor. That was perfect but i Microwaved in 12 oz mug so it was only half or little more of the cup. So i couldn't click it properly. Then at last i increased the recipe little n added few chocolate chips n Sprite(lemon flavor) and it came so fluffy, raised well and tasted delicious. OK No more stories, will move on to the recipe now...

Mixed Beans Mango Salad / 15 Beans Mango Salad

How can a summer special post ends without a mango recipe?! So for the final day post on the theme "Summer Salad" going to share a super delicious n nutritious salad with Mixed Beans and Mango, both raw n ripe mangoes. Long back i bookmarked this salad from Taste of Home site. The original recipe is with Black beans only but i recreated with mixed beans/15 beans combo. Usually i make Sundal and curry with the 15beans. This 15 beans pack are available at all local grocery stores. It comprises of mixed beans, peas, lentils and are as follows...black beans, red beans, Dark and Light Red kidney beans, navy beans, great northern bean,Large and,Baby lima beans,pinto beans,Green and Yellow split peas, black-eyed peas,Various forms of lentil- Red Chief, Eston, Pardina, Crimson, Cranberry beans (shell beans), chick peas, Small white bean, Pink Bean.
For today's post i actually wanted to share a fruit salad but except mangoes n apples everything was over. Then i decided to make some simple salad with mango n mixed beans which i soaked to make sundal. Leave some setting time for this salad, so that the dressing blends completely with the beans n fruits. This recipe was adapted from Taste of Home.

Carrot Salad With Orange Honey Dressing

For the Day 2 of Blogging Marathon # 17  under the theme "Summer Salads" I am going to share you another refreshing and healthy salad - Carrot Salad with Orange Honey Dressing. First time i tried this orange-honey combo for my salad as dressing and it turned out awesome. It was superb! n i have no words to explain the taste...Friends do give it a try, sure you will love it to the core, even if u don't like salad i am sure you will love to eat this healthy n colorful salad. You won't believe, my 3yr old loved this salad very much but he didn't like raw ginger pieces. Other than that he loved it :)
This recipe was slightly adapted from allrecipes.com In the original recipe they used lemon juice n sugar for dressing but i replaced lemon with Fresh Navel Orange n sugar with honey. To make it even more healthy n tasty i added a handful of cooked black eye peas, finely chopped raw mango,red onion n tomato and few ginger stripes. I also tried the same with fresh lime juice that was also so refreshing and yummy. This salad can be served along with your meal too, so that u will consume more salad n less food ! Mango Mint Sparkler


Today's recipe is very delicious n refreshing drink with Mango n Mint Combo. I made this recipe long back for The Gourmet Seven April Edition under theme Summer Drinks. Because of my health issue i couldn't able to post that time and every time i kept postponing for one or the other reason. But that was also for a good reason i think, Yup that time i was not feeling well and the pictures were also not much impressive n inviting. Now after seeing so many mango recipes in the blogosphere i was tempted n made this drink today n clicked again. Hope i clicked well this time :)
I like mint touch in any fruit drink n with mango mint suits very well and this is on the perfect drink for Hot Sunny days. Very simple and easy to make. The original recipe calls for canned mango drink but here i used fresh mango pulp. Do give it a try, am sure you will love it!!
