Phulka Recipe | How To Make Soft Puffed Phulka Roti with video and step wise photos. For Week 2 under Kitchen Basics/How To's theme I am sharing Phulka Roti recipe. Phulka is an Indian flat bread, very soft and healthy zero oil rotis that is cooked on direct flame method. Making perfect and soft phulka is really a tricky job for many south Indians. If you over do, the rotis turn crisp and hard and if you did not cook properly the rotis will taste raw and also result in digestion problem. So today, I will be sharing few tips and tricks to make soft and puffy phulka rotis without any oil/curd or any leavening ingredients. I learned few tips from my friends and from my own experience. The same way you can puff up the rotis on tawa itself, will make a separate post of it later.

All you need is a whole wheat flour/Atta and water to make dough. And you have to make really a soft, smooth and loose dough, that is you have to use more water to knead dough and also knead the dough with less pressure by folding the dough. Also the dough resting time is important, allow the dough to rest for minimum 20-30 minutes. I tried a short video to show hot to cook phulka on tawa and direct flame. Hope it helps.

Lachha Paratha / Whole Wheat Lachha Paratha / Mulit Layered Paratha - Its Easy & Vegan too!!

Lachha Paratha is a Mulit layered Indian Flat bread/Paratha of Punjabi Cuisine that is traditionally prepared in Tandoor(a cylindrical clay or metal oven) and using ghee. But it can also be prepared using oil in tawa/griddle like chapathi or plain paratha. I love south Indian Paratto, a similar multi layered flat bread that is made with Maida/All purpose Flour. And recently learned the trick of making perfect Parotta and am planning to make a post of it soon here.
Now coming to the Lachha Paratha, mostly this lachha paratha is made using ghee and is not advisable for regular diet meal but i wanted to make it less calorie and also a complete Vegan Recipe, so i used whole wheat flour and oil to make this paratha. Even oil gives nice flaky and flavorful paratha. Hope the step by step pictures helps anyone to make this Paratha very easy and now lets move on to the recipe...

Barley Adai / Barley Lentils Crepes / Barley Paruppu Dosa

This is another Healthy Breakfast / Dinner recipe with more nutritional value, rich in protein, fiber, low calorie and filling recipe perfect to kick start anyone's day. Its good for diet and diabetic people too. This is one of my recent experiment with Pearl Barley and Mixed lentils combo. Though Pearl Barley is low in protein content compared to the whole grain barley but low in calorie and the addition of lentils like Green gram, Orange lentils/Masoor dal, Tuvar Dal, Channa dal, Urad dal makes it a protein packed meal. The Barley Adai / Dosa is a Instant version it doesn't require fermentation and can be cooked soon after grinding. The dosa turned so crispy and tasty and i served with Kadamba Chutney, which i posted last week. The combo was so good and my kids loved this Barley Adai so much. For a change from regular Dosa & Adai, try this healthy and tasty Barley Adai. And also Pearl Barley are very cheap, healthy and easy to use and also available in all supermarket & Departmental stores. Great nutrition in an less or cheap price.

Bialys / Soft Chewy Rolls - We Knead To Bake # 5

After completing four successful breads for the past months, the fifth bread of We Knead to Bake is Bialys. Bialys is nothing but a typical round bread more or less similar to a Bagel with a depressed center with savory onion filling and a soft chewy & floury crust. But this is the first time am tasting this delicious chewy rolls/bread that too all baked by me. Thanks to Aparna for giving us different and nice choices of bread and we thoroughly enjoy baking & eating these lovely bread every month and am really glad to be a part of this Great event.
Baking Bialys is not a difficult task but to achieve the perfect floury crust with chewy & soft bread is really a challenging one. Over baking will give u a hard bread so keep an eye while baking and it doesn't need more than 12-15 minutes. For the savory filling along with spiced caramelized onions i added sliced fresh bell peppers and chopped cilantro for extra flavor and taste. It was so good and we loved the spicy toppy. For my kids i baked them plain with some mozzarella cheese and they loved the cheesy bread to the core. If u are looking for a easy & savory bread with simple ingredients n process then this is one of the best option and am sure u will love it. Now off to the recipe...

Naan / Naan Recipe Without Yeast / Naan Using Multi Grain Flour

Hope u all had a fantastic weekend, mine too went well. Wish u a energetic n happy week ahead  :) Today's recipe is Naan/leavened flat bread without yeast. I mostly  use whole wheat flour for all my rotis/Paratha but this time i bought multi grain flour instead of whole wheat flour. Compared to wheat flour multi grain flour rotis are lil' different in taste n u will feel the more fiber content. But health wise Multi grain flour are nutritious, contains more fiber, vitamin B n realted minerals, low calorie etc. so Alternatively i am using whole wheat n multi grain flours.

How to make Idli/Dosa Batter / Homemade Idli/Dosa Batter /Soft Idli & Crispy Dosa Batter without Idli Rice

I wanted to post this Idli/Dosa Batter recipe for long time, but today only got the right time with pics & step wise pics ready. Though its not a special recipe i wish to have some Indian Basics in my Spicy Treats' Recipe Index. Definitely making a soft idlis and crispy dosa for a beginner is a challenging task, so this post is specially for the beginners in cooking.
First time when i clicked the step wise pictures, i ground the batter in the traditional/actual method ie grinding dal and rice separately then mixing together. But this time decided to share the convenient method, grinding everything together for easy and less messy job. And also this time my boys helped me to take step wise pics clearly, they posed by holding rice/dal and to show batter texture, so sweet na?! They do help me a lot in kitchen but while taking pictures they trouble me equally :(

Chilli Tomato Paratha / Spicy Tomato Chapathi

This is one of my recent experiment which turned out Super Hit with my kids. Week days dinner will be mostly Chapathi & Curry. My kid wanted his chapathi to be colorful, like green(Palak Paratha), Yellow(Dal Paratha), Pink(beets Paratha) and this time he asked me,
Sanjay - Mommy, do u know to make red color or blue color chapathi?! Daily its boring to eat plain            
               chapathi...can u make some red or blue chapathi today?
Me -   sure dear, which color u want Red or Blue?! (Praying myself that he should say "Red" and not
           blue :)
Sanjay - after lil' pause....today red color chapathi & tomorrow blue ok?!
Me -   Thank God!! :) and started thinking what to add for red color?!
First thought to make chapathi with Pizza sauce then changed my mind since wanted to use fresh vegetables and made this mild Tangy & Spicy Tomato Chapathi. The chapathi tasted so good and both Sanjay & Akshay loved it and asked me to make it again :)I served this chili tomato paratha with Coconut Chutney and that combo also worked. I was happy that becoz of Sanjay i got one new post to share here..U too try this for your kids and let me know the result. Now off to the recipe...

Mixed Bean N Brown Rice Adai / 15 Bean Brown Rice Adai

I used to make Adai once in a week since its rich in protein and taste and of course my favorite too. Especially Adai with Drumstick leaves. Recently i saw adai recipe in Nalini's blog with Mixed bean n dhal which is even more healthy with the combo of more legumes n lentils. I loved that idea and made it using 15 bean mix and Brown rice. The Adai turned out so tasty, crispy n inner soft and delicious. As i used brown basmati rice, the adai/dosa turned crisp. Its nice to add more legumes n lentils to our diet in a super easy n delicious way. My H n kids loved this protein n fiber rich Adai. Even its good for diabetic & dieting people since its low carb and high protein. Good for breakfast n dinner too. Now to the recipe...
