Malai Kofta Curry / How To Make Malai Kofta Curry Recipe

One of the most popular North Indian Curry, Malai Kofta Curry was provided by Nupur for this Month's South Vs North Challenge for South Team Members. SNC is an eveny by Divya Pramil, in which there are two team Southern and Northern Team Members. One of The South Team member will challenge the North team with an authentic south Indian recipe and the North team will challenge the south team with an authentic North Indian recipe and both team will have a month time to prepare and post the recipe on their space. To know More about this event please hop on to Divya's space. As per the event, this Month's North Team host Nupur has challenged the south team with this cream, rich and delicious Malai Kofta Curry. Kofta Curry is nothing but a deep fried kofta, paneer-potato balls in rich, spicy tomato gravy.
This is in my to do list for long time, i have cooked this Kofta curry twice or thrice since it involves lengthy preparation and process i avoid this gravy but this one of my kids' favorite curry. On seeing this month's challenge i decided to try it and thanks to Nupur for this yummy recipe. I slightly tweaked the recipe since i do not like grinding cardamom and mace i skipped it and instead of cashew nut paste and roasted and blended along with onions. Broccoli Potato Fry / Potato Stir Fry With Broccoli / Potato Varuval With Broccoli

Potato and broccoli are my family's most favorite vegetable and we love it any form. I often make dishes with these two veggies atleast a simple stir fry or a oven roasted Broccoli. Today's recipe is also one such simple and easy to make stir fry that i made for lunch on a lazy day. Some days i make an elaborate south indian lunch with sambar, rasam, poriyal, varuval, papad or chapathi, any veg curry, raita for lunch. But some days either simple rasam or curd rice with this potato stir fry.
This time have few florets left in the fridge, so thought of adding it to the potato fry and sure its an awesome and flavorful combo. The fry tasted yumm with rasam and rice. We just loved it..This Broccoli Potato Fry does not involve much spices and mildly flavored with garlic. Very simple and easy to make side dish that pairs well with any Indian Meal.

Cauliflower Kheema / Gobi Kheema Recipe

Kheema / Keema is a minced meat curry but typically minced mutton curry is often mentioned as Kheema. But it can also be done with any kind of meat and even with fresh vegetables and soya. I have already shared the recipe for Soya Kheema/Soya Granules Kheema. And i have tried with crumbled Tofu and Cauliflower also. Today am sharing the Cauliflower kheema recipe. This is nothing but a grated caulfilower curry with peas and mild spices. This Gobi Keema pairs well with Rotis, Dosa and even as a sandwich filling. Or you can make it as a kati roll with some spiced onions, green chutney with plain paratha. Actually i wanted to present this Cauliflower keema like kati roll but, was run out of time hubby came for lunch little earlier that day so i clicked the pictures in a hurry. Later for my kids i made roll with this gobi keema and they liked it and surprisingly asked one more. This Gobi Keema is perfect for a mess free lunch box either with chapathis as roll or as a Keema Sandwich.

Garlic Bread From Scratch / Homemade Garlic Bread Recipe

For this Month's We Knead To Bake, Aparna let us to Bake our own desired Bread. I have a huge list of breads in my Bookmarked folder. And this Garlic Bread From Scratch is one of the bread in my to do list and is one my family's favorite bread. I often make this garlic bread with store bought breads. But for the first time tried it from scratch and it was so perfect. we just loved it, i doubled the original recipe and made 2 loaves. First day served as a snack and the other day we had it for dinner along with Pizza. No one will say No to this crispy crust, soft centered garlic flavored bread. And the method also simple and enjoyed baking this flavorful bread for my kids. This is a must try for all Garlic bread lovers, sure a keeper recipe. I decided to make it again and again for my kids.

Dill Leaves Paratha / Dill Lachha Paratha / Dill Layered Paratha Recipe

Dill is an aromatic herb and is mentioned as Dill weed that are used to flavor food stuffs. Dill herb is also called as Suva in Gujarathi, Sathakuppi in Tamil. Both fresh and dried dill leaves, seeds are widely used in culinary creations. But the fresh dill leaves/dill weed gives nice aroma and has more health benefits compared to the dried ones. I mostly prefer the fresh dill weed, love the strong aroma,feathery look and the fresh green color of the herb.
I usually make deep fried stuffs like dill leaves pakora, dill masal vadai or simple add to flavor potatoes or garlic butter. This time wanted to make some other dishes. And the first recipe came to mind was Paratha. This is a plain Dill leaves Paratha using whole wheat flour. Instead of regular rolling method i tried as layered paratha, Lachha Paratha. This is bit time consuming, but sure gives extra flavor, taste and looks so good than the plain rotis. This was a hit and my kids loved it a lot. So next time, if you see fresh dill leaves at grocery store, pick a bunch and try this Dill Leaves Lachha Paratha for your family and let me know how it turned out to you.

Radish Chutney / Mullangi Chutney ~ Easy Chutney Recipes !

Radish is one veg that available in my fridge anytime. like onion tomato veggies like radish, cabbage, Broccoli, Spinach are must for me. Every week i cook these veggies in any form, these veggies are rich in Fiber, anti oxidants and tons of nutritional benefits and the most important thing, it is less in calories and high in nutrients and so helps in weight loss. So, if you are a person who diet then you must include these veggies in your meal.
I love making chutneys with vegetables and this Radish Chutney is one my favorite. I often make this chutney for idli/dosa but never get a chance to click. This time i purposely made it for blog since I don't have idli batter in hand simply served it as a side for chapathis. At home Everyone liked the combo. This Radish Chutney is very simple and similar to our regular onion tomato chutney with nice flavor and taste. Here, i used pink radish but you can also use the white one. Now off to the recipe...

Cranberry Rice / Spicy Cranberry Rice

Cranberries are normally considered too sharp to be eaten plain and raw, as they are not only sour but bitter as well. But Me and V love fresh cranberries with salt and chilli powder, like how we eat raw mango. The sour and mild sweet Cranberries tastes so good with chilli and salt. Whenever i buy fresh cranberries i make Instant Cranberry pickle or simply end up eating it raw. This time for a change tried this Cranberry Rice using fresh cranberries, since we love savory stuffs with Cranberries than the sweet based or drinks. Also the savory and spicy preparation of Cranberries tastes similar to Mango recipes. So i tried this rice similar to Raw Mango Rice with the addition of onions. The end result was so yummy, tangy and spicy rice. We loved it a lot. If you haven't tried any savory recipes with Cranberries then give it a try, you will definitely love it. Chicken Manchurian / Chicken Manchurian Recipe / Dry Chicken Manchurian

Manchurian is an Indo-Chinese Starte. It can also be served as a Side for Fried Rice. Manchurian can be Vegetarian like Vegetable, Gobi, Paneer, Baby corn, Mushroom or even with idly/ Idly Manchurian. And Non-Vegetarian like Chicken, Fish, Egg, shrimp and more. Of all the Manchurian recipes, chicken Manchurian is my favorite. Even my kids love this Chicken Manchurian more than the Gobi Manchurian. There are tons of method to prepare this Chicken Manchrian, Today I am sharing the simple and easy to make version. This is a Chicken Manchurian Dry Version. Like my Chilli Chicken recipe, here also I did not use Vinegar, Chinese Salt, artificial food colour and for colour i used kashmiri red chilli powder. And for the manchurian sauce i used corn flour and water instead chicken stock. Chicken stock sure gives you nice flavor and taste that too if you making a manchurian gravy. Now off to the recipe.

Onion Bell Pepper Focaccia / Spicy Onion Red Pepper Focaccia

For this week's Love2Bake event , I am sharing one of my favorite bread Focaccia - Onion Bell Pepper Focaccia. I used the same recipe of Potato Focaccia Pugliese for the dough with sauteed spicy onion bell pepper topping. Since me and V love spicy stuff I added chilli flakes in herbed oil and also with sauteed onion bell pepper topping. It was a total hit and even my kids loved it more than the Rosemary Potato Focaccia. This bread makes a perfect snack with some hot beverage or can be served as a meal along with some soup. I served it for evening snack along with Marinara Sauce. Nice crusty outer with soft and chewy bread.

Almond Strawberry Milkshake / Strawberry Milkshake With Almonds

After a short break of five days, today am back to blogging and feeling happy for the same. I planned to share few Valentine's Day special recipes but because of my personal issues I could not make it up this time. Except this pink Strawberry milkshake i don't have any related recipes for the occasion. Since Pink & Strawberries are a part of Valentine's Day celebration. Any one there who doesn't like these two? I know the answer will be a big No. So a simple, hearty and delicious Pink treat for your loved ones.
This is a simple Strawberry Milkshake with Vanilla Ice cream and Almonds. Almonds have paired well with strawberries and milkshake tasted so delicious. More than my kids i loved it a lot. Instead of a plain fruity drink just try adding some soaked nuts to it for a even more filling and tasty milkshake.

Fresh Papaya Juice / Papaya Grape Juice - Vegan Papaya Juice

For Vegan Thursday today I am sharing a simple but healthy Juice Recipe using Papaya, Grape and Strawberry. We take Papaya regularly and for me its a compulsory since Papaya has tons of nutritional benefits - good for Eyes, skin and the high content Anti oxidants helps to reduce cholesterol and also controls premature ageing, the high fiber and low calorie nature helps in weight loss and a natural blood purifier and body cleanser. So without fail at least once in a month I take papaya. This time the Papaya was bit over ripe but mostly i like the perfectly ripe fruits not the over ripe ones except the Mangoes. So again the over ripe Papaya turned into this delicious drink along with some grape, strawberry and with the hint of lemon. Over all a power packed drink with tons of benefits and filling drink that is perfect for breakfast or take it as a snack when you are on diet or if you need a healthy, low calorie & filling snack. As all my fruits were well ripe and sweet i added only 1/2 tsp to balance the sweet & sour.

I always prepare Payasam/Kheer for all special occasions at home. As today also a special day as its viji;s birthday i prepared this Beets Pasta Payasam. This is my first try with beets and pasta combo, have tried pasta/macaroni payasam before but the combo turned out so good. My H who doesn't like Pasta in any way loved this creamy beets pasta kheer. I usually add ground nuts powder to my payasam but for a change i added ground almond & cashew paste. Over all a rich, creamy and delicious payasam. Masoor Dal Sambar using Pressure Cooker. You Might think what's new in this? We usually cook dal in pressure cooker then why the title using Pressure cooker, Right? Yes.,this is bit different from our regular sambar in which the entire process is done in pressure cooker and it takes 20-25 minutes. No need to cook dal separately just saute onion, tomato, veggies and dal and cook together for 2 whistle that's it Sambar Ready. Sounds Interesting? As i said early, i always prefer quick fix meal that takes 30 minutes or less to make the complete meal. Like the Pressure Cooker Channa Masala Curry this Masoor Dal Sambar is one such recipe that doesn't require prior cooking process and the entire dish is made in pressure cooker. you can cook sambar and rice, stir fry simultaneously and everything will be ready in 30 minutes. Unlike Tuvar dal, Masoor dal cooks faster and no need to cook it separately. I often make this Masoor dal sambar with any desired veggies. Here, i used Brinjal, Drumstick, Radish. Only thing is you need to chop veggies little big chunks so that it will not turn mushy after pressure cooking.

Pasta With Tomato Cream Sauce / Tri Colour Pasta With Tomato Cream Sauce

Pasta is one recipe that i cook very rarely but now-a-days at least once in a week i am cooking Pasta for kids. My little one loves pasta a lot so he ask me for pasta alternate day, if not he will not eat his meal one full day saying that he did not like rice or chapathi. So other day without any option i have to cook pasta for him. I usually make a stir fry type pasta dish for a change tried Pasta with Tomato Cream sauce. I had some left over Store bought Organic Tomato Basil Sauce and also little cream in the fridge. I wanted to use them soon so i browsed for tomato and cream based pasta recipes and finally my search ended with this Tomato Cream Sauce Pasta in Pioneer Woman. I slightly tweaked the recipe and skipped Parmesan and just topped with very little Garlic Parmesan sprinkle. This is a slight tangy, rich & creamy pasta with simple procedure. Not only kids even adults would love this a lot. I felt so creamy, rich and not my kind of dish, but my kids loved it a lot. Now off to the recipe.,

My kids are not exceptional too and few weeks back they bought a box of Blue Bunnys Vanilla Ice cream & Mint Chocolate ice cream.
