Today I am here with an another easy, yummy kids friendly summer treat recipe, Mango Popsicle. I love mangoes in any form and if it is a chilled treat like Mango Milkshake, Mango Lassi, Mango Kulfi or Mango popsicle is my most favorite of all. I have already shared the Mango Kulfi/Mango creamsicle recipe and this time tried simple fruit popsicle with mango puree. This popsicle also doesn't require more ingredients just 2 or 3 ingredients is needed to make Mango Popsicle. Nothing can beat the homemade fresh fruit popsicle.
 Recipe is simple to make but I find it hard to take pictures of this Mango popsicle. It started melting soon, no matter temperature is hot or cold. I have seen many popsicle pictures showing nice and smooth texture of popsicle but I couldn't able to click one like that. May be next time will try to present fruit pop with neat pictures. Palak Puri(Poori) Recipe | Spinach Puri

Poori is a deep fried flat bread that can be prepared using whole wheat flour & APF. Poori, Batura are my kids most favorite tiffin items but I rarely make it for them. Even though pooris are easy to make, I am lazy to do deep fry stuffs and will cook only to feed blog.  But the things are changing now, as my kids listing the menu to cook what today and what they like to have. And often Poori will be in their list, so this time it is Palak Puri/Spinach Puri. The little one was so much excited to see green colored puris and he loved it a lot. I also prepared Palak Rasam with the left over palak puree(I used a big bunch of palak to make puree) and that was super hit more than this palak puri. I wanted to make it again to share here as it tasted so good and healthy too.
Sometimes the simple things will turn out great in the kitchen and this palak puri is one such recipe. The color and flavor sure pleases everyone. For palak puree, I prepared the same way I used to do for Palak Paneer but you can also simply use the blanched spinach to make simple puree and mix it with wheat flour and make dough. I like to mildly spice up the puree with some ginger, garlic and green chilli. Here you go.,

Easy and simple way of making Chicken Biryani using Pressure Cooker / Pressure cooker chicken Biryani recipe with step by step photos. At home, everyone loves Biryani/Pulao, at least once in a week or once in 10 days I cook Biryani or Pulao for them. Chicken Biryani is my most favorite of all and even my kids love it a lot. I usually prefer simple and one pot recipes on weekends and I very rarely make Dum Biryani or Layered Biryani. One pot cooking is not only easy also it saves
time spending in the kitchen especially during weekends. Pressure cooker Chicken biryani is a simple version of biryani with great taste and flavor.
As chicken does not take more time to cook,this whole cooking process takes 30 minutes or less time. A complete meal in 30 minutes or less. Here, I used 1 cup coconut milk but you can skip or replace it with yogurt or chicken stock or simply cook with water. Coconut milk enhances the taste and flavor also using chicken or meat stock/broth gives rich flavor to the dish. Oats paniyaram is an Instant recipe that can be prepared using some left over idli/dosa batter. This oats paniyaram is a healthy, yummy and filling dish that can be served for breakfast, dinner or a perfect after school snack for kids. Here, I used store bought oat flour but you can make it home easily by grinding the rolled oats or quick cooking oats in blender and add it to the recipe. It is good to include oats and other whole grains in your daily meal. Whole grains are rich in fiber and low in calories and also they helps to reduce blood cholesterol and aids in good digestion. I use oats, millets, legumes and lentils in my daily cooking along with veggies.
Oats Paniyaram is one such healthy recipe with great taste. To make it even more tasty and crispy I also added some semolina/sooji/rava and rice flour to the batter. This oats paniyaram is not only my kids' favorite V also loved it a lot. If you don't have paniyam pan/Appam pan or Aebleskiver pan no worries, you can use your tawa/griddle or any wide pan and make it as thick pancake or Oats Oothappam. I tried that too, oats oothappam turned out soft and yummy. Now off to the recipe.

Tomato Puree(sauce) is one of the basic and important ingredient for making any sauce-pizza sauce/pasta sauce, North Indian gravy like Malai Kofta Curry, Paneer Kolhapuri, Paneer Buterr Masala, sabzis, soups and many more recipes. Initially I was using canned Tomato puree more than the fresh tomatoes and then reduced the canned stuffs due to its preservatives and added artificial flavors.
If you have tomato puree in hand, you can make any Indian curry in no time. As the tomatoes are pre cooked and thick tomato puree/sauce tend to cook faster and can make any gravy and sabzis quickly. I saw this pre cooked Tomato Puree recipe in youtube and have tried it couple of times for my gravy/curry recipes. I felt this pressure cooker/pre cooked method is more easy and best than the usual way of making tomato puree by blanching the tomatoes then cooling in ice cold water and blending. Based on the tomato variety the color and texture of tomato puree varies. Here, I used vine tomatoes you can use roma tomatoes or campari tomatoes or any desired variety.

Kuthiraivali Tomato Pulao is a simple yet flavorful and healthy one pot meal recipe with step by step photos. Few Months back I saw this millets in Indian Grocery Store in the name of Mario/Vrat Chawal. The grains looked tiny and pale in colour. It also resembles like a Millet grain and checked Google. Then found to know that it the same Kuthiraivali/Barnyard Millet. This Morio/Mario/Sawa Millet/Barnyard Millet is cooked and eaten during fasting days and hence it is also called as Vrat Ke Chawal.
I was happy to found another variety of Millet in my place and immediately bought a packet to try it. I have been using Foxtail Millet/Hulled Millet/Thinai in my cooking and have shared few recipes here too. With Barnyard millet I tried this tomato pulao and it turned good. Mildly flavored and easy to make one pot meal recipe perfect to pack for lunch box or makes a great weekend vegetarian meal along with some raita & vegetable stir fry. I served it with plain homemade curd & Onion Pakoda.

Kuzhambu Milagai Thool is nothing but a chilli powder mix with dal and other spices. For any south Indian dishes like Kuzhambu, Stir Fry/Varuval, Sambar, Poriyal this kuzhambu milagai thool is used traditionally and that gives unique taste, flavor and authentic touch to the dishes. I like to use kuzhambu Milagai thool for my south indian kuzhambu recipes instead of plain red chilli powder. But here, I do not find kuzhambu milagai thool  now-a-days, So I prepare it at home.

Last year when my Bil visited us, My Mom-in-law has sent few packets of fresh Homemade Milagai Thool & Dhaniya powder. She prepares such flavorful dhaniya & milagai thool like my Grand mom. This is my Mom-in-law's recipe, I got it for a small portion that stays for 1-2 months. She uses sun dried dry red chillies and dhaniya and roast only the other ingredients, but here sun drying method is not possible during winter season and that time I usually roast all the ingredients and grind it.
Kara Kuzhambu, Puli Kuzhambu, Egg Kuzhambu, Masal Kuzhambu, Varuval tastes good and flavorful when cooked using this Milagai thool instead of plain red chilli powder. If you want to taste authentic south Indian dishes then you must try it with this Milagai Thool. You can even use this chilli powder to make Sambar and all other day to day cooking except for North Indian Curry & Sabzis. For North Indian style gravy/sabzis you have to use plain chilli powder without other spices & lentils combo.

Not only as a snack, this onion pakoda makes a perfect side dish for any south Indian Variety rice, Rasam & Rice, Sambar Sadham etc.,I usually make Onion Pakora,north Indian style Pakora that is crispy and slightly soft texture. But this Onion Pakoda is crispy and crunchy ones that is similar to the ones we get in our Tea Kadai/Tea shops, Bakery Shops in Tamil Nadu. In salem(my home town), you can find this flavorful onion pakoda in any bakery shop, tea stall during noon & evening time. There are few bakery shops in Town area & Agraharam street where they prepare fresh pakoda every day. V is more fond of deep fried snacks and this onion pakoda is his most favorite of all snacks. But i rarely make it for him and I usually prepare the Pakoras/bajji kind of snack that is served with Chaat Chutneys or ketchup.

So this time, I prepared for him and to share it here on my blog. This Vengaya Pakoda doesn't require any dipping, crunchy and flavorful snack. Here,I used onions but you can also use cabbage to make Cabbage Pakoda, Spinach or any greens to make Keerai Pakoda. And Munthiri Pakoda with addition of Cashew nuts. I have already shared Cashew Almond Pakoda for kids, Bittergourd Pakoda/Pavakkai Pakoda really good snack for diabetic people.

Today's recipe is a simple Kids friendly Fish Starter, Fish Finger both Deep fried & Baked Fish Finger version. Last month When I prepared Breadcrumbs with Homemade White Bread I immediately wanted to try some cutlet or Croquettes with it. But then I got to remember that got some King Fish Fillet at Whole Foods On weekend. So instead of cutlets, tried this easy Fish Finger recipe and it turned out great. My kids loved it a lot, they even liked the baked fillet too. I do not eat fish so I couldn't say about the taste but my kids thoroughly enjoyed it. You can add any spices to your taste or to your kids preference I mildly spiced the fish fillets and set it rest for 20-30 minutes. But you can fry or bake them immediately. Resting time definitely gives better flavor and taste to it.
Fish Finger are easy to make and can be served with ketchup or any kind of creamy or spicy dipping.

Easy, healthy and delicious Restaurant style Sweet Corn Vegetable Soup Recipe with Step by Step Photos. I always love simple and clear soups than the blended/creamy soups. I often make Cabbage clear soup for me, it is like a diet soup. Except me no one likes that cabbage soup so for them I made this restaurant style Clear Soup with Sweet corn, Mixed vegetables & green onion(spring onion). It turned out good and even my kids loved this soup.

This is a mildly spiced, light soup loaded with fresh vegetables. You can add any vegetables of your choice, here I used Sweet corn, carrots, beans, cabbage, green onion. Like my other soup recipes, here also I used Homemade Vegetable Stock/Broth but you can use store bought or plain water too. But try to make it vegetable stock. Making stock at home is so simple and easy, if interested checkout my Vegetable Stock recipe. This time, I added a small piece of Cinnamon to my stock and the cinnamon flavor was well incorporated with the stock and the soup was flavorful and healthy too.

Methi Poori Recipe with step by step photos. Methi Poori is a deep fried whole wheat flat bread with Dried Methi leaves. My kids love pooris a lot but I cook it very rarely. And now the elder one started giving menu each day. I am cooking as per his choice now-a-days. Last week, he wanted Poori & Channa Masala for breakfast, that means Chole Batura. It was a busy weekday morning and I don't have enough time to make Batura that time, instead of Batura I prepared this quick Methi Poori. As this methi poori, doesn't require resting time and can be prepared in a jiffy.
So One side set Easy Channa Masala in Pressure Cooker and the other side fried Methi Poori. My kids happily had their breakfast :) I added little Rava/Sooji/Semolina to the dough, that gives crispy and puffy poori, and also the pooris didn't drink oil. As you could see in the pictures, poori were not oily. Outer crispy puffed layer and inner layer was soft. Now off to the recipe.

Kale or borecole (Brassica oleracea Acephala Group) is a vegetable with green or purple leaves, in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms of vegetables, wiki says. Kale is rich in Vitamin K, Vitamin A, Vitamin C, Iron, Magnesium,  anit oxidants etc.,Most important health benefits of consuming Kale regularly helps in blood glucose control in Diabetes and also lowers the blood pressure. Though I cook Kale dishes often, never get a chance to click and share here.
Like Broccoli, Kale also suits well with Indian spices and Indian recipes. The taste of Kale Poriyal is similar to that Drumstick leaves Poriyal. Though the fresh kale has different flavor from Drumstick leaves, the cooked one tastes like Drumtick leaves. I love drumstick leaves recipes a lot, but I do not see here often. So, started using Kale in place of Drumstick leaves. This Kale Poriyal is a simple recipe and makes a perfect accompaniment for Rice & Rasam or with Curd Rice, Lemon Rice & Sambar Sadham. We had Kale Poriyal with plain rice, Brinjal Puli kuzhambu, Vazhakkai Varuval & Fresh Homemade Curd.

I was caught with cold & sinus headache so I could  not able to post Kitchen Basics Recipe last weekend. I will try to be regular with my post in coming weekends. Now coming to today's recipe Mutton Kurma, Mutton Kurma is a mildly spiced flavorful and rich curry using Mutton-Cashew Nuts-Poppy seeds combo. After my own try with Kozhi Milagu Kuzhambu I got confident to try few Non-Veg recipes of my own. And this Mutton Korma is my own creation, keeping the vegetarian Kurma recipe in mind I tried the same with Mutton. Only thing I added extra was Yogurt. Addition of fresh yogurt/curd gives nice texture and taste to kurma. If you haven't tried Mutton curry recipe with yogurt, next time try to add couple of tbsp of yogurt and you will be surprised with the taste and texture of the curry. And along with Mutton I wanted to add some aloo/potato & peas too. But I don't have peas in hand, so added potatoes alone.

I love broccoli in any form and I love to cook it the Indian Way more, especially in all possible south Indian dishes. Have tried Broccoli Rasam, Broccoli Kootu, Broccoli Poha Upma and few more recipes.
I love stuffed dosa and this broccoli masal dosa is one of my favorite, broccoli pairs well with potato in any form and this Broccoli Masal is another winning recipe. Even if you don't like Broccoli or hesitate to cook broccoli, don't worry, you can cook it along with any of your favorite dish or vegetable. Potato is one of our family's favorite vegetable, I tried more recipes with Broccoli & Potato combo. Also, Broccoli goes well with Indian spices,I have tried lot of recipes the Indian Way.
I prefer Indian Cooking more than any other cuisines, cooking with spices is my favorite. We eat breakfast either idlis or rotis or upma or pongal, even bread and milk and sometimes for weekends I cook elaborate meal for breakfast and Last weekend we had such elaborate typical south Indian breakfast- Idli/Dosa/Broccoli Masal Dosa with 2 chutneys & sambar.

But V do not like Idiyappam with sweetenend Coconut milk instead he loves it with Jaggery Syrup. So whenever I make Idiyappam, I make a thin jaggery syrup and peanut sesame powder for him. But this time for a change, I prepared a thick sauce and stirred with idiyappam and served. He liked it but said the sweetness was less. So I added more jaggery sauce for him and we three have it with mild sweet.
This Vella Sevai is delicious and equally healthy breakfast or after school snack for kids. My kids loved it a lot. Steamed foods are generally healthy and instead of rice flour, you can use Red rice flour or Ragi Flour or Wheat Flour or Millet Flour to make Idiyappam. Next time I am planning to try with wheat flour/Atta.

Chaats are my most favorite snack and i love all kind of chaat items. Chaats are tongue tickling, refreshing and filling snack. It makes me happy, fresh and i have no words to describe my love for chaats. Also, I love Yogurt/Curd in any form and would like to have plain yogurt/curd with Idly, Dosa, Rotis, Upma, fruits and include it daily in my diet . And Chaats with yogurt/Dahi is a double treat to me. I can simply have a bowl full of plain yogurt mixed with Sweet Tamarind Chutney. I never get bored with chaats & yogurt.
Today's recipe is one of my favorite Chaat, Dahi Papdi Chaat. This time I used store bought Papdis & Sev and only made Chaat Chutneys at home. If you have chaat chutneys ready in hand, then you can make any kind of chaats in a jiffy. I added less yogurt for picture & Presentation, since that time no one was at home and I clicked almost 5 recipes continuously, 3 chaat and other two recipes. So just for pictures, I added little curd & chutneys so that the papdis will not turn soggy sooner, But be generous with the addition of Curd & Chaat Chutneys for a delicious Dahi Chaat.

I always prefer one pot meal or one pot cooking method and this is one such recipe using store bought chole masala powder. Actually, I wanted to share the authentic Punjabi Chole recipe. Being a friend and neighbor to Punjabi family, I wanted to learn  authentic Punjabi recipes. I have tasted Punjbai Samosa, Aloo Parantha, chaats, Kadhi Pakora, Punjabi Chole, Batura & few more recipes prepared by Auntie. She makes the best samosa, kadhi and all her dishes are yummy.

When I asked Auntie for the Chole recipe, She said that they use an unique Chole Masala Powder for Chole. And she added that the Chole Masala Powder is from Delhi, India from their well know spice store. Auntie & myself tried to identify the ingredients from that powder but in vain. We able to judge 1 or 2 ingredients but not the whole and the proportions. She said that she have tried couple of time to make homemade channa masala powder but wasn't successful. But she suggested to try the it the same way with any store bought Chole Masala Powder. Then one fine day as per her suggestion I tried this recipe and it turned out good.

At first I hesitated to try with yogurt, then first time tried with small amount for chicken and to my surprise it turned out good and it tasted almost same like the one we had in restaurant. Phulka is an Indian flat bread, very soft and healthy zero oil rotis that is cooked on direct flame method. Making perfect and soft phulka is really a tricky job for many south Indians. If you over do, the rotis turn crisp and hard and if you did not cook properly the rotis will taste raw and also result in digestion problem. So today, I will be sharing few tips and tricks to make soft and puffy phulka rotis without any oil/curd or any leavening ingredients. I learned few tips from my friends and from my own experience. The same way you can puff up the rotis on tawa itself, will make a separate post of it later.

All you need is a whole wheat flour/Atta and water to make dough. And you have to make really a soft, smooth and loose dough, that is you have to use more water to knead dough and also knead the dough with less pressure by folding the dough. Also the dough resting time is important, allow the dough to rest for minimum 20-30 minutes. I tried a short video to show hot to cook phulka on tawa and direct flame. Hope it helps.

Earlier this month saw this Roasted Broccoli Soup on Foodgawker site and the recipe does not require any milk or cream and also it is simple and healthy. Immediately after making Homemade Vegetable Stock, I tried this soup and loved it to the core. Roasted broccoli flavor was too good and without milk and cream the soup got nice creamy texture due to the addition of potato. I added 1/2 of a medium potato and the result was awesome. V was working from home for 2 days and he requested me to make some spicy snack. I know what he means by spicy snack, nothing but any deep fried savory delights. First I thought of making Punjabi Samosa but samosa making consumes much time for shaping and it was already 2 pm. Within 2 hours I can't finish cooking and clicking. Since after 4 there will not be enough light as it was really a dark gloomy day. So decided to make some Kachoris and with one quick and yummy Onion filling, Pyaz Ki Kachori|Onion Kachori.

Kachoris are in my to do list since long time, long back tried Peas Kachoris but it was like Stuffed pooris and not the crispy snack kind. I referred Vahchef's video for Onion filling and prepared dough on my own. I got good tips for making crispy kachoris/Samosa from my Neighbor Aunt. She said that for making crispy, flaky samosa and kachoris you need to add more oil to the flour, the flour should be mixed well with the oil first then use very little water to knead dough. Minimum 3-4 tbsp of oil for 1 cup of flour is needed. And then you get crispy, flaky and perfect punjabi samosa. 4 tbsp is 1/4 cup of oil for 1 cup of flour. But i don't want to add that much oil, so I tried with 1 tbsp oil and it turned out good at first attempt. The most important thing for crispy kachoris, that you need to fry them in right temperature. If its too hot then it will turn soft and become stuffed pooris, If it is less hot then kachoris will be oily and soggy. Please read all the instructions and notes before starting the recipe.

Its been long time I had Idiyappam with Thengai Paal, and last week for our weekend breakfast I prepared it and had it to my heart. Idiyappam is a popular South Indian Breakfast recipe, a steamed rice noodles that is prepared using rice flour. You can use homemade rice flour or store bought rice flour or Idiyappam flour for making Idiyappam. Idiyappam is served with vegetable stew or sweetened Coconut milk/Thengai Paal or any spicy Non-veg Curry.

I never had Idiyappam with stew or spicy gravy, Thengai paal or Sweetened Coconut Milk is my favorite combo. Here we rarely get good tender fresh coconut, so Whenever we get such fresh coconut I used to make Puttu and this time its Thengai Paal. Myself and my kids enjoyed it a lot and made Vella Sevai/Idiyappam in jaggery sauce for V. I have already shared Idiyappam recipe but with different method. This Idiyappam recipe is easy to make and anyone can make soft Idiyappam using this recipe. This is how My Mom & Grand Mom makes Idiyappam at home. You can make it in a jiffy, only thing is the dough should be at right consistency. Here, I have given tips to make soft Idiyappam with any kind of rice flour. I have tried with store bought rice flour, Pathiri Podi and Idiyappam flour too. You can use whichever is available to you.

Just framed a theme by myself to be active on weekends. Lets see how it goes :)  So for this Saturday, I am sharing Homemade Vegetable Stock under Kitchen Basics Theme. I usually prefer Homemade stock for soups and I never bought from stores. But for me making stock is a big task, though it is a simple process somehow I am lazy to do it. When I decided to share Kitchen Basics, the first thing came to my mind was Vegetable Stock. So that I can make try my bookmarked recipes.
I mostly prefer light and clear soup and milk based or cheesy creamy soups are not my kind. For most of the soup recipes you need stock or Broth. Stock or Broth is nothing but a water simmered with lots of vegetable or meat for an hour or more. Instead of adding plain water to soup adding broth gives good taste, flavor and healthy too. Basic Stock can also be flavored with some herbs and spices.
I am sharing the basic vegetable stock recipe without much herbs and spices. Here I used 5-6 vegetables but you can use any available vegetables and spices.

Cauliflower 65 or crispy & Spicy fried cauliflower is a tempting and addictive snack and guess it is almost everyone's favorite from kids to aged person. There are tons of recipes for this cauliflower. I too have already posted Restaurant style Gobi 65, in which the cauliflower florets are dipped in a batter and then deep fried till crisp. But this recipe is super quick, so easy and doesn't require any batter. My MIL make gobi 65 this way but with Instant 65 Masala Mix. And once I saw Chef Dhamu's recipe on tv channel and recreated myself. Only thing there's no batter and everything is mixed like we do for Pakoda and deep fried immediately. This recipe sure gives you perfect crispy and yummy fried cauliflower.

This cauliflower 65 makes a perfect tea time snack with some hot beverages. Not only as a snack, this cauliflower 65 makes a great side dish with Tomato Biryani, Fried Rice, Rasam & Rice, Curd rice.

I am sharing a healthy sweet on this special day, Oats Sweet Pongal / Oats Sakkarai Pongal. Last year I shared Thinai Sakkarai Pongal / Millet Sweet Pongal and this year sweet Pongal using Oats. Oats Sweet Pongal is quicker and easier than the regular Sakkarai Pongal using Rice. I followed the Basic Sakkarai Pongal recipe and cooked it on stove top without pressure cooker method. Jaggery Paired well with Oats and the pongal turned out finger licking good. For all Oats Recipes lover this sweet pongal is a must try. I thoroughly enjoyed this delicious Pongal and even My kids loved it a lot.

Guacamole Recipe | Spicy Guacamole Recipe | Easy Avocado Dip

Guacamole Recipe
Guacamole is nothing but a creamy and delicious dip/Condiment prepared using Avocados. One of the healthiest Dip for snacks, spread of Sandwiches/Burritos. It is one of the popular Mexican recipe.
After referring few sites and recipe card from Fresh Markets, I made this yummy Dip and it turned out perfect and tasted similar to restaurant style guacamole. Adding Jalapeno Pepper is optional, if you want it spicy then add it or simply skip it and add some fresh ground pepper for mild spice and flavor. Once in a while we buy Tortilla/Tostitos Chips for snacking and I usually make Fresh Tomato Salsa or sometimes we buy canned ones from store.
This time I had Avocados in hand, so made this creamy and yummy dip and we thoroughly enjoyed munching those crunchy tortilla with this delicious Spicy Guacamole. Next time when you buy Avocados from Market, please try this Guacamole and enjoy with chips/sandwiches/Burritos or You can make it as a salad with adding some steamed or grilled corn & some black beans.
